Fusarium is a fungus of the genus Fusarium, which, along with ergot, is one of the most important harmful fungi in cereals and maize. They not only reduce yields and quality, but also produce so-called mycotoxins (natural fungal toxins). The consumption of contaminated grain can endanger the health and performance of humans and animals. The fungal toxins formed cannot be rendered harmless during processing by heating or preservation. All types of grain and many other plants can be infested by Fusarium. Durum wheat is by far the most affected, followed by triticale, oats and common wheat.
